The AI of the survivors can be rough around the edges when it comes to defending themselves against zombies or chatting to each other but they are definitely able to help a lot around your base and make the world feel more alive (lol). It's mostly the same otherwise. Zomboid lies when it tells you in Apocalypse stealth is preferred to combat. There is no stealth.

A: You need to Turn on the "Always Show Cursor". In my testing even while doing this, if the NPC's are cranked up too much you still won't see your cursor. It's very like a mod issue. In my playthroughs, I try to save a group of them & have them wander around my base performing basic tasks, like putting all the corpses in a pile. They can be a bit buggy though. If left off screen for a while, a npc can decimate a large amount of zombies. Then you right click again and ask if he/she want join you, I remember you have to be fast in asking to join must ask before he/she leaves.
